Roasted Carrots and Mushrooms


There are some items that you will always have in the fridge. Carrots and mushrooms are one of them. With this lovely and simple recipe you won't need to pop to the store to get the ingredients.

Ingredients

carrots
mushrooms
salt
black pepper
olive oil



 For The Carrots

heat the oven at 200 degrees and spray oil on your oven tray 

wash your carrots, you can peel the skin off the carrots if you like but I didn't (too much work)



cut them into diagonal shapes and place in a bowl
add some salt, black pepper and olive oil and stir nicely

place the carrots in the tray and let it cook for 15-20mins


 For The Mushrooms

wash your mushrooms and slice them into a thick or thin strip
place them in a bowl





add salt, black pepper and olive oil and stir nicely.

Final Prep

                          
add your mushrooms to the partially roasted/cooked carrots and cook for an additional 30mins

Roasted carrots and mushrooms cooked to perfection.


Dinner is served

Chicken & Vegeable Stir Fry Medium Noodles

I have been feeling very adventurous with my meals of late and stepped up from the salmon and vegetables meals which have been very filling but it's always nice to have a nice blend and balance of poultry, fish and meat.

Ingredients

courgettes
chicken breast
medium noodles
mushrooms
soy sauce
onions
packed vegetables


 chopped vegetables : bell peppers, onions, courgettes, mushrooms

diced chicken breast

broccoli, green beans,bell peppers,onions, courgettes, mushrooms

stir fried chicken breast

chicken breasts ready

stir fr mix

medium noodles

Baby Corn with Vegetables


Happy Thursday!

One more day till the end of the week!!

Sometimes all I want to do is veg out on vegetables ..."Get it" ? haha!!

I am a 100% veggie lover and always incorporate vegetables in all my meals as you can probably tell.

Today I have a baby corn and vegetables recipe for you, very simple and delicious.
You can have this with rice or noodles or just eat it on it's own like I have done.

Ingredients

one pack of baby corn, cubed
onions, diced
yellow bell peppers,cubed
red bell peppers, cubed
orange bell peppers, cubed
1 tsp of cumin seeds
salt and black pepper to taste

BabyCorn, Bell peppers,Black Pepper Cumin Seeds, Courgettes, Onions, Tomatoes & Olive Oil

Instructions

For The Vegetable Prep

dice the onions, bell peppers, tomatoes, courgettes and baby corn

For The Vegetable Stir Fry

add 1tbsp of olive oil into the wok and heat it and add cumin seeds, when cumin seeds crackle , add the baby corn and courgettes




Stir fry baby corn and vegetable together 

 stir for a few minutes until brown, then add the bell peppers and tomatoes
add salt and black peppers


For The Final Prep

Baby Corn and veggies


 Serve Hot

Tortilla Chicken Fillet Breast Wraps


Hello, how is everyone doing today? I hope you all had a lovely day 

I haven't had one of these in yonks and really fancied it today.And what Yems wants, Yems gets! So there we have it ....... This is a very simple and quick meal to make and very delicious too.

Ingredients

bell peppers(green, yellow and red)
courgettes
chicken breast fillets
tortilla wraps
tortilla spice mix (optional)
tomatoes




 Instructions

 For The Chicken Fillet Breast

heat the wok and add 2tsps of extra virgin oil 
wash chicken fillet in lemon juice and cut into squares




  For The Chicken Fillet Prep

place chicken breast into the hot oil and stir until it's cooked and brown
add vegetables and stir, do not let the vegetable be too soft
add the smokey bbq sauce and stir nicely...


 For The Tortilla Wrap Prep

heat the oven and place tortilla on the foil for 5mins till they are wam
( my wraps turned out to be a bit hard as I was on the phone and forget them in the oven)

             place wraps on a plate and add the chicken fillet and vegetable mix and wrap

Breaded Chicken Fillet With Quinoa Spinach

Hello,

Don't throw out the leftover meals, simply turn last night's dinner into an entirely new dish with all the ingredients you have in the fridge.

I had lots of spinach, green peas, bell peppers and quinoa left from the week and decided to mix them all together to make a quinoa spinach with a chicken fillet.

I am sure you will agree that leftover meals are the best to have the next day and always taste better too.

Ingredients
avocado
bell peppers
breaded chicken fillet
green peas
sweet corn
spinach
tomatoes
quinoa

Honey Glazed Carrots, Steak with Mustard Sauce and Potato Bake

Happy Sunday!

Hope you have all had a lovely weekend.

A nice bit of Steak for dinner with some honey glazed carrots.

Ingredients

irish steaks
packet of baby corn
packet of carrots
bell peppers
onions
courgettes
salt & seasoning
potato gratin ( store bought)


Baby Corn, Bell Peppers, Courgettes, Carrots, Steak & Onions

Honey, Black Pepper, Salt, Garlic, Lemon Juice, Ground Cumin Djion Mustard & Mango Chilli
 Instructions

 For The Irish Steak

wash the steak with lemon juice and season with black salt, pepper, garlic and ground cumin
season with onions, bell peppers and courgettes
place in fridge for a few hours

heat oven at 300 degrees and spray foil with oil
place the steak on the foil and cook for 45mins turning over until steak is cooked
ensure steak is cooked


Seasoned Irish Steak with Peppers, Onion & Courgettes



 For The Carrots

peel your carrots, and slice  them into your preferred size wash the carrots and place them in a pot and boil them, do not let them be too soft
Boiled carrots


once the carrots are boiled, add a little bit oil to the frying pan and pan fry until it turns brown and soft
add salt and black pepper
turn the carrots around carefully and allow other side to be drown
in a small bowl whisk together butter and honey and pour over the carrots
season with salt and pepper

 For The Potato Gratin

place in the oven for 40mins and allow to  bake

For The Mustard Sauce

1tsp of mango chilli
2tsp Dijon mustard
1 tsp ground black pepper
                                              
place the honey glazed carrots,cooked steak with mustard sauce and potato bake on the plate

Sweet Potato, Pearl Barley and Vegetables


Sweet Potato, Bell Peppers & Pearl Barley

Instructions

 For The Pearl Barley

to cook your pearl barley follow the instructions on the packet of your purchased pearl barley
once cooked set aside and prep the vegetables and sweet potato


  For The  Sweet Potato

wash the skin of the sweet potato properly and cut into circular shapes
place in a pot and boil for 8-10mins, once cooked
remove and place in the oven to bake for 10-15mins
set aside once baked

cut sweet potatoes
For the Bell Peppers

cut the bell peppers into thin strips and grill;
set aside once grilled


Final Prep

wash salad leaves
place baked sweet potato, pearl barley, grilled bell peppers and salad leaves on the plate
