Honey Glazed Carrots, Steak with Mustard Sauce and Potato Bake

Happy Sunday!

Hope you have all had a lovely weekend.

A nice bit of Steak for dinner with some honey glazed carrots.

Ingredients

irish steaks
packet of baby corn
packet of carrots
bell peppers
onions
courgettes
salt & seasoning
potato gratin ( store bought)


Baby Corn, Bell Peppers, Courgettes, Carrots, Steak & Onions

Honey, Black Pepper, Salt, Garlic, Lemon Juice, Ground Cumin Djion Mustard & Mango Chilli
 Instructions

 For The Irish Steak

wash the steak with lemon juice and season with black salt, pepper, garlic and ground cumin
season with onions, bell peppers and courgettes
place in fridge for a few hours

heat oven at 300 degrees and spray foil with oil
place the steak on the foil and cook for 45mins turning over until steak is cooked
ensure steak is cooked

 For The Carrots

peel your carrots, and slice  them into your preferred size wash the carrots and place them in a pot and boil them, do not let them be too soft
Boiled carrots


once the carrots are boiled, add a little bit oil to the frying pan and pan fry until it turns brown and soft
add salt and black pepper
turn the carrots around carefully and allow other side to be drown
in a small bowl whisk together butter and honey and pour over the carrots
season with salt and pepper

 For The Potato Gratin

place in the oven for 40mins and allow to  bake

For The Mustard Sauce

1tsp of mango chilli
2tsp Dijon mustard
1 tsp ground black pepper
                                              
place the honey glazed carrots,cooked steak with mustard sauce and potato bake on the plate

Sweet Potato Spinach and Cranberry Quinoa Salad

Happy Monday Folks!!

How was your weekend?
After rummaging through my cupboard on Saturday to find my packet of quinoa sitting there all alone feeling dejected I decided to cook it. I actually cooked the whole packet and kept the rest in the fridge after preparing my delicious Saturday meal which was quinoa with prawns and vegetables.




Ingredients

1 packet of quinoa
1 packet of spinach
2 sweet potatoes
packet of cranberry sprinkle
salt & seasoning


Instructions

 For The Quinoa 

to cook your quinoa follow the instruction on the packet of your purchased quinoa
once cooked set aside and prep your the spinach and sweet potato



 For the Sweet Potato

peel the sweet potato and cut into square shapes
place in a pot and boil for 8-10mins

ready to be boiled

 For the Spinach

remove from packaging and wash
place spinach in a wok with a drop of oil and allow spinach to simmer for about 3mins till it turns green and changes colour slightly
remove and place in a bowl and set aside

Final Prep

place cooked sweet potato in a large bowl, add the cooked quinoa,cranberry seeds and the spinach and mix together gently
season with black pepper and little bit of salt
this delicious meal can be served hot or cold

Voila !!!

Don't be deceived by the small and tiny grains, quinoa is very filling and delicious!!
