Mango Kale Smoothie


Hello Smoothie Lovers,

I'm back once again with some lovely smoothies for you to try.
I can honestly say it was only a few weeks ago I said " Happy July" and in the twinkling of an eye August is here.

Smoothies are great but it is always nice to have it all in moderation so I had a nice break away from the smoothies and now I am back with the green smoothie attack ha-ha!!


Ingredients
  • cucumber
  • kale or spinach
  • water
  • frozen mango or pineapple

Instructions
  • to achieve the swirl blend both fruits separately
  • place the kale and cucumber in the blender and blend until smooth
  • place the frozen mango in the blender and blend until smooth
  • pour the mango mix in your glass cup and top it up with the kale mix

Sweet Potato Spinach and Cranberry Quinoa Salad

Happy Monday Folks!!

How was your weekend?
After rummaging through my cupboard on Saturday to find my packet of quinoa sitting there all alone feeling dejected I decided to cook it. I actually cooked the whole packet and kept the rest in the fridge after preparing my delicious Saturday meal which was quinoa with prawns and vegetables.




Ingredients

1 packet of quinoa
1 packet of spinach
2 sweet potatoes
packet of cranberry sprinkle
salt & seasoning


Instructions

 For The Quinoa 

to cook your quinoa follow the instruction on the packet of your purchased quinoa
once cooked set aside and prep your the spinach and sweet potato



 For the Sweet Potato

peel the sweet potato and cut into square shapes
place in a pot and boil for 8-10mins

ready to be boiled

 For the Spinach

remove from packaging and wash
place spinach in a wok with a drop of oil and allow spinach to simmer for about 3mins till it turns green and changes colour slightly
remove and place in a bowl and set aside

Final Prep

place cooked sweet potato in a large bowl, add the cooked quinoa,cranberry seeds and the spinach and mix together gently
season with black pepper and little bit of salt
this delicious meal can be served hot or cold

Voila !!!

Don't be deceived by the small and tiny grains, quinoa is very filling and delicious!!

Green Smoothie On the Go For Breakfast


Top of the morning to you all,

I was in such a hurry this morning that I had to make my breakfast smoothie a " takeaway/ on the go smoothie".

Ingredients

  • cucumber
  • kale
  • dates (as a sweetener to combat the bitterness)
  • water 
Cucumber, Dates, Kale & Water




Instructions

  • wash the kale, chop the cucumbers and place in the blender
  • add the dates and lots of water
  • blend till smooth
  • pour in glass and enjoy

Healthy Breakfast: Spinach Omelette with Avocado & Blueberries


Good Morning,

Happy Friday!!

Another spinach omelette for you this morning, I much rather prefer a spinach omelette with fruits to a full English breakfast these days.

In the past when I have had a full English breakfast I am stuffed like pigs in a blanket and the next thing for me to do is sleep. With the spinach omelette and fruits I find myself full very lightly and I am ready to get cracking with whatever I have planned for the weekend.

 Ingredients
  • 1/2 of an avocado (sliced)
  • 1 egg
  • blueberries
  • 1/4 bell pepper ( red)
  • handful of spinach or kale
  • handful of mushrooms
  • pinch of salt
  • olive oil
  • onions

Grilled Stuffed Bell Peppers


Happy Thursday Lovely People,

How's everyone doing?


To all the lovely people reading this,it's been about a month since I posted a recipe.
The good and beautiful life of studies,career and the rest took over a little bit but I am not complaining :-)

Thank you to my readers who sent me messages asking If I was alright..... I'm alive and well ..... and now I'm back!

Just to manage my time and my other activities properly, I'll post recipes 2-3 times a week for now till my schedule is back to normal.

Right ... lets get started.



Ingredients 

aubergines
3 bell large bell peppers
courgettes
garlic
kale
tinned tomatoes
tinned tuna
mushrooms
onions
seasoning

 Bell peppers, Kale, Mushrooms, Tuna & Plum tomatoes


For the Bell Peppers 

preheat the oven
wash the bell peppers,cut the top carefully and remove the seeds carefully
wash the bell peppers again
place on tin foil, wrap and place it in the oven for 10-15mins till it's a little bit soft

For the Vegetable Sauce Mix

wash all the vegetables and chop them finely
heat a tablespoon of olive and stir fry the vegetables
once nicely browned, add the tinned tomato and kale to make a nice vegetable sauce mix

Fill the Bell Peppers with the vegetable sauce mix

once the bell peppers are slightly grilled and soft, place it in a baking dish and
fill the vegetable sauce mix into the bell peppers and place it in the oven for 20-25mins

once the bell peppers are slightly browned and the contents are bubbling then it's ready
you can sprinkle some cheese on it or eat it on it's own
serve it nice and  hot

Cucumber Kale Mango & Pear Smoothie

Happy Saturday!!!

I am currently loving the fruits and vegetables smoothie swirl mix. The taste of the vegetables as you take your first sip on the smoothie and before you get to the end the sweet fruit hits your taste buds  hmm-mm bellissimo.

Ingredients
  • cucumber
  • frozen pears (skin peeled)
  • frozen mangoes (tinned)
  • kale 
  • unsweetened almond milk

Some of my readers have asked me to list alternatives fruits as they might not have the fruits I use in their countries.
 
Blend fruits and vegetables separately


Alternative fruits
  • to achieve the green mix : you can use spinach/green salad leaves or any green vegetable will do.
  • to achieve the cream mix : you can use mangoes,apples, pineapple or bananas

Instructions

  • to achieve the swirl you will need to blend the fruits separately
  • place frozen mango and pears in the blender, add unsweetened milk and blend until smooth
  • place kale and cucumber in the blender, add unsweetened milk and blend until smooth
  • pour the mangoes and pear mix in your cup and top it up with the kale and cucumber mix
  • serve cold

Triple Delight Smoothie


Ingredients

Purple layer
frozen blueberries
unsweetened almond milk

Green layer 
cucumber
frozen kale
unsweetened almond milk

Orange layer 
frozen bananas
frozen mangoes
unsweetened almond milk

Green, Red and Orange Smoothie 


Instructions

Blend each of the ingredients separately and layer
Serve cold

As you sip on this smoothie you're hit with the green taste then boom comes the banana and mango sweet mix which ends nicely with the sharp blueberry mix :-)

A nice mix of fruits and vegetables to make a triple delight smoothie.

Green Smoothie Breakfast With Spirulina Powder


Happy Monday Folks!!

Hope you all had a lovely weekend.

It's our spring bank holiday in the United Kingdom today and our fellow Americans are celebrating Memorial day.

I am currently sat at my desk typing away and as I look at the window all I can see and hear is rain! rain! rain! ....Yes I have started talking about the weather again but us Brits are known for talking about the weather. Can you blame us? We rarely get any sunshine and when we do we go nuts!!

The weather chat is the ultimate ice breaker for us when in public.

At the bus-stop you'll hear lovely day today isn't?
On the train if you're on a friendly train, you'll hear blimey it's freezing isn't ha ha!

So here's my rant to you....the weather is awful today, it's raining cats and dogs! Grrrrr!!!!.... 

I did some powder, nuts and seeds shopping at the weekend and got a nice bulk in. I have started added nuts to my smoothies to give me that energy and boost. I'll talk about my purchases in another blog.

Breakfast today is a green smoothie with Spirulina powder, I call it the "green eyed monster" because it's so green and smells a bit fishy in my opinion but with some good benefits.



Ingredients
  • 1 tablespoon of Spirulina powder
  • 2 frozen bananas
  • handful of kale
  • water
  • dried fruits and linseed 
  • ice cube (optional)

Instructions
  • place washed kale, frozen bananas in blender, add Spirulina powder, water and blend till smooth
  • pour in breakfast bowl
  • serve cold
  • add seeds or dried fruits

Green Juice

Happy Sunday All!

It's a Green juice kind of Sunday for me before I head to church to hear the word of God and dance along to the songs from the choir! Today is the 3rd Sunday of the month which is Jeans Sunday in my church so it was relatively quick for me to find something to wear, make a green juice and head out!

On a normal Sunday I rummage through all my clothes testing and trying them all on then ...before I blink it's time to go!! Grrrrr late!!


Ingredients

  • broccoli
  • courgette
  • grapefruit
  • kale
  • honey
  • water





Instructions
  • Place the kale in the blender, pour water and blend on it's own till it's  slightly smooth
  • Add the broccoli, sliced courgettes and grapefruit
  • Add honey (I add honey to sweeten the juice, you can add apples or grapes)
  • Pour in glass cup
  • Serve cold

Green Smoothie for Breakfast

I love green smoothies!! If you have never tried a green smoothie I would encourage you to give it a try and start with basic green fruits like kiwis, green grapes and spinach or kale.

My very first green smoothie was really small as I wasn't sure of how it would taste and ever since then, green smoothies have become my go to smoothies every morning.

In one of my previous blogs I talked about 10 benefits of green smoothies and one of them was that green smoothies offer pure nutrition to the body and is also a really good detox for the body packed with lots of nutrients and minerals.

If you are a Green smoothie virgin start your smoothie with the following fruits: Spinach or kale, water, mango and bananas. I am not a fan of ice so I always freeze my fruit as it gives  the smoothie a delicious rich cool taste so I always say "ditch the ice and freeze your fruit".

I always blend the spinach or kale first, then add the other fruits afterwards and voila I have my rich looking green smoothie.

Green Smoothie Recipe
  • handful of spinach or kale
  • 2 frozen bananas
  • 2 frozen Kiwis
  • 2 cups of water
  • Frozen green grapes


A mix of Kale,Green grapes, Bananas and Kiwi
Instructions
  • Put the frozen spinach/kale into the blender, add some water and blend until all the leaves are gone and you can see the rich green texture
  • Add the banana, green grapes, kiwis and blend thoroughly
  • Pour into your class cup
  • Garnish with seeds (Chia or Flaxseeds) or fruits
