Honey Glazed Carrots, Steak with Mustard Sauce and Potato Bake

Happy Sunday!

Hope you have all had a lovely weekend.

A nice bit of Steak for dinner with some honey glazed carrots.

Ingredients

irish steaks
packet of baby corn
packet of carrots
bell peppers
onions
courgettes
salt & seasoning
potato gratin ( store bought)


Baby Corn, Bell Peppers, Courgettes, Carrots, Steak & Onions

Honey, Black Pepper, Salt, Garlic, Lemon Juice, Ground Cumin Djion Mustard & Mango Chilli
 Instructions

 For The Irish Steak

wash the steak with lemon juice and season with black salt, pepper, garlic and ground cumin
season with onions, bell peppers and courgettes
place in fridge for a few hours

heat oven at 300 degrees and spray foil with oil
place the steak on the foil and cook for 45mins turning over until steak is cooked
ensure steak is cooked

 For The Carrots

peel your carrots, and slice  them into your preferred size wash the carrots and place them in a pot and boil them, do not let them be too soft
Boiled carrots


once the carrots are boiled, add a little bit oil to the frying pan and pan fry until it turns brown and soft
add salt and black pepper
turn the carrots around carefully and allow other side to be drown
in a small bowl whisk together butter and honey and pour over the carrots
season with salt and pepper

 For The Potato Gratin

place in the oven for 40mins and allow to  bake

For The Mustard Sauce

1tsp of mango chilli
2tsp Dijon mustard
1 tsp ground black pepper
                                              
place the honey glazed carrots,cooked steak with mustard sauce and potato bake on the plate

Apple Carrot Orange & Ginger Smoothie


The sun is still shinning in the United Kingdom which makes a great change and another excuse to have a delicious smoothie.

I have a nice mix of summer fruits for you today.

Ingredients
  • apple
  • carrots
  • ginger
  • honey(optional)
  • water
  • oranges

Delicious with that gingery taste 


Instructions

  • peel the skin off your oranges and cut into small pieces,wash your carrots cut them into small pieces
  • wash your apples and ginger and cut them into small pieces
  • place all your fruits into the blender, add a teaspoon of honey and add water
  • blend until smooth
  • serve cold

Citrus Strawberry Smoothie

How is everyone doing on this sunny & thankful Tuesday?  I am just dandy and the sight of some sunshine is an additional bonus. When the sun is out, I feel like my triple A batteries to life have been recharged with extra energy .. ha ha!!

Today we have a mix of citrus fruits with lemon,low fat yogurt and honey.At the weekend I bought some oranges and when I put a knife to it and opened it up, I realised they were actually blood orange tangerines....oh well! Waste not,Want not!!

Let's make a smoothie ...

Ingredients
  • 1 banana
  • 1/2 lemon
  • 1 blood orange tangerine or orange
  • cup of water(I have added water because i don't want my smoothie to be too stodgy)
  • frozen strawberries
  • honey
  • low fat yogurt



Instructions
  • peel skin of fruits, place in blender, add yogurt, honey and water
  • blend till smooth
  • serve cold
nice texture

Banana and Coconut Smoothie


Hello Smoothie Lovers,

I hope you're all well.

It's been a busy couple of days for me but I'm back with a new smoothie recipe for you.

On my way home from the office today I walked pass the mini fruit stall today  and I saw coconuts and thought oh wow I haven't had one of these in ages. As usual I bought two for £1.. bargain eh?

Whilst breaking the coconut I remembered why I hadn't bothered buying a coconut all this while. Breaking a coconut can be such a tedious task Grrrr!! and not to talk of taking out the white meat out of the shell. The white meat is  known as the "Endosperm" ....what a peculiar name for the internal part of a coconut ha ha !!

Ingredients
  • 2 bananas
  • 1 cup of milk
  • 1 teaspoon of honey (optional)
  • few pieces of the white meat
  • ice cubes
  • chocolate dust(optional)

    Instructions
    • place the white meat in the blender, add the bananas, ice cubes, milk and honey
    • blend until smooth
    • pour into glass cup and serve cold

    Green Juice

    Happy Sunday All!

    It's a Green juice kind of Sunday for me before I head to church to hear the word of God and dance along to the songs from the choir! Today is the 3rd Sunday of the month which is Jeans Sunday in my church so it was relatively quick for me to find something to wear, make a green juice and head out!

    On a normal Sunday I rummage through all my clothes testing and trying them all on then ...before I blink it's time to go!! Grrrrr late!!


    Ingredients

    • broccoli
    • courgette
    • grapefruit
    • kale
    • honey
    • water





    Instructions
    • Place the kale in the blender, pour water and blend on it's own till it's  slightly smooth
    • Add the broccoli, sliced courgettes and grapefruit
    • Add honey (I add honey to sweeten the juice, you can add apples or grapes)
    • Pour in glass cup
    • Serve cold

    Mango & Grapefruit Smoothie


    Grapefruits are known for that sour-sweet taste that it produces and I can bet you lots of people will say they don't like grapefruits due to it's peculiar taste.

    Mangoes  are generally sweet although the taste and texture of the flesh varies. Some mangoes have a soft pulp texture similar to an overripe plum while others are firm like an avocado or cantaloupe. This fruit compared to grapefruits is much preferred.

    I have a very simple recipe that I would you to try with these two interesting fruits.

    Ingredients

    • 1 mango
    • 2 grapefruits
    • a teaspoon of honey
    • splash of single cream light
    • Ice cubes ( not a regular occurrence for me)

    Instructions
    • Peel the skin and cut the the grapefruit and mango and put in the blender, add a teaspoon of honey. I add honey to soften the sour -sweet taste of the grapefruit.
    • Add a splash of single cream, add the ice cubes
    • Blend till smooth
    • Pour into glass cup
    • Serve cold

    Healthy Pancakes with Fruits and Honey

    Hello Pancakes Lovers,

    Happy Sunday!!

    I hope you're having a lovey one.

    Before I head out to Church I wanted to share with you a quick breakfast recipe that you could incorporate with fruits, this was my breakfast this morning to get me ready for the early morning praise and worship!!


    Someone might ask are pancakes healthy? The answer to that is Yes they are.



    Pancakes are a hearty option, providing a high quantity of carbohydrates and a range of vitamins and minerals, but pancakes are relatively high in fat, calories and sodium. With careful meal planning, you can include an occasional serving of pancakes in your diet, unless you have a wheat gluten allergy.


    Pancakes with Kiwis, Raspberries and a drop of honey.


    Vitamins and Minerals 

    A serving of pancakes is a good source of phosphorus and calcium, with 20 percent and 18 percent of the daily recommended intake, respectively. This makes pancakes a smart option for boosting bone strength and your body’s ability to make RNA and DNA. Pancakes serve up 12 percent of the iodine and riboflavin you need each day as well, and you’ll take in smaller quantities of vitamin C, thiamine, vitamin B-6, niacin, vitamin B-12, magnesium, zinc, copper and iron. 

    So go ahead and have a healthy pancake with some fruits to give you that boost to start your day.
