Roasted Carrots and Mushrooms


There are some items that you will always have in the fridge. Carrots and mushrooms are one of them. With this lovely and simple recipe you won't need to pop to the store to get the ingredients.

Ingredients

carrots
mushrooms
salt
black pepper
olive oil



 For The Carrots

heat the oven at 200 degrees and spray oil on your oven tray 

wash your carrots, you can peel the skin off the carrots if you like but I didn't (too much work)



cut them into diagonal shapes and place in a bowl
add some salt, black pepper and olive oil and stir nicely

place the carrots in the tray and let it cook for 15-20mins


 For The Mushrooms

wash your mushrooms and slice them into a thick or thin strip
place them in a bowl





add salt, black pepper and olive oil and stir nicely.

Final Prep

                          
add your mushrooms to the partially roasted/cooked carrots and cook for an additional 30mins

Roasted carrots and mushrooms cooked to perfection.


Dinner is served

Lamb Kebab Salad


Hello,

So today I am adding a small portion of meat to my meal in the form of minted lamb kebabs with a nice rich salad.

Grilled Stuffed Bell Peppers


Happy Thursday Lovely People,

How's everyone doing?


To all the lovely people reading this,it's been about a month since I posted a recipe.
The good and beautiful life of studies,career and the rest took over a little bit but I am not complaining :-)

Thank you to my readers who sent me messages asking If I was alright..... I'm alive and well ..... and now I'm back!

Just to manage my time and my other activities properly, I'll post recipes 2-3 times a week for now till my schedule is back to normal.

Right ... lets get started.



Ingredients 

aubergines
3 bell large bell peppers
courgettes
garlic
kale
tinned tomatoes
tinned tuna
mushrooms
onions
seasoning

 Bell peppers, Kale, Mushrooms, Tuna & Plum tomatoes


For the Bell Peppers 

preheat the oven
wash the bell peppers,cut the top carefully and remove the seeds carefully
wash the bell peppers again
place on tin foil, wrap and place it in the oven for 10-15mins till it's a little bit soft

For the Vegetable Sauce Mix

wash all the vegetables and chop them finely
heat a tablespoon of olive and stir fry the vegetables
once nicely browned, add the tinned tomato and kale to make a nice vegetable sauce mix

Fill the Bell Peppers with the vegetable sauce mix

once the bell peppers are slightly grilled and soft, place it in a baking dish and
fill the vegetable sauce mix into the bell peppers and place it in the oven for 20-25mins

Ready Grilled Bell Peppers

once the bell peppers are slightly browned and the contents are bubbling then it's ready
you can sprinkle some cheese on it or eat it on it's own
serve it nice and  hot

Healthy Dinner:Salmon On A Mushroom & Spinach Bed With A Mango Salsa Salad

Happy Thursday All,

Hope everyone had a lovely day today.

I get really excited about dinner just as much as I get excited about my smoothies along  with a whole lot of other things that I won't mention on here ... *chuckles*

I love to browse the web and search for healthy ingredients that consists of the contents of my fridge as I have lot of things in my fridge...fruits, veggies you name it I got it :-)

So I came across this lovely hearty belly filling dinner and thought... YES that's what I am having. 

So let's get started....


Ingredients 
bell peppers ( Red & Yellow)
coriander
cherry tomatoes
red onion
salmon
spinach
lime
mango chunks
mushrooms
olive oil 

seasonings



For the Mango Salsa Side Salad

dice the onions, bell peppers, mango slices and place in a clean bowl
chop some coriander leaves finely, add to the mix with black pepper, a pinch of salt and olive oil
mix well and place in the fridge





For the Salmon

preheat the oven and oil your baking tray or foil
remove from package and clean gently with some white vinegar
season with some salt and black pepper
place in the oven for 25-35mins until it's cooked and nicely done
I like my salmon nice and brown


For the Bed of Spinach

heat a tea spoon of olive oil in a wok
add washed mushrooms,onions and tomatoes and stir fry for 4-5 mins
add salt and black pepper
add washed spinach or kale to the wok and stir
squeeze some lime juice into it and stir


Place the spinach mix on the plate with the juices flowing, add salmon on top and finish it off with your mango salsa side salad

Aubergine Courgette Pepper Mushroom Sausages & Egg


As I was looking online for healthy recipes to have for supper with all the leftover vegetables in my fridge I came across this hearty recipe full of vegetables and thought voila!! I  have amended the recipe and added one or two more vegetables.

Ingredients
1 aubergine/egg plant diced
2 bell peppers diced
 1 courgette diced
egg or chicken or salmon
6 frankfurter sausages chopped & grilled
1/2 ginger minced 
1 onions chopped 
5 mushrooms chopped
salt & seasoning

Let's Cook

Instructions
Heat 1 tablespoon of olive oil in a large wok
              Add diced aubergine & courgette and cook until it's brown on both sides
Once browned remove from wok and place in a plate
 Add chopped sausages,onions, mushrooms, bell peppers to the hot wok
Stir until brown

Ingredients prepped
Rich  display of vegetables all combined

Add aubergine to wok and stir together.
Fry or poach egg
Serve Aubergine,Peppers, Mushrooms, Sausages with Egg
You don't necessarily have to use egg, you can have it with some chicken or salmon

Delicious

Verdict: Absolutely delicious, filling and very healthy.

Stir Fry Noodles with Runner Beans & Skewered Beef


Skewered Beef
Meat and poultry form a good part of our diet.I  fancied some beef and chicken this weekend so I did a little bit of meat shopping and also bought some mushrooms and vegetables to make a lovely supper.


Noodles, Beef and Vegetables
Dinner is served

Ingredients
All purpose seasoning
Beef
Black pepper
Bell peppers ( Red & Green)
Light Soy Sauce
Mushrooms
Noodles
Onions
Olive oil
Runner Beans
Salt
Sweet Corn
Stir Fry Vegetables
Wooden Skewer


Instructions

For the Beef 

Preheat Oven
Cut beef into square pieces
Wash well with vinegar and let it stand for 10mins
Rinse  and season with beef seasoning, black pepper,salt, onions and place in the fridge for a little while.
Chop bell peppers into squares
Remove wooden skewers from pack
Place beef squared pieces unto the wooden skewer with bell peppers, repeat process till you have no more beef or bell peppers left
Wrap the end of the wooden skewer sticks with some foil so it doesn't burn you when you turn it over
Brush the foil with some olive oil and place skewered beef in the preheated oven.
Turn over 25mins later, ensure the beef is cooked

For the Stir Fry Vegetables

Preheat a little bit of olive oil in the wok and add already washed vegetables to the hot oil and turn until the vegetables are nice, soft and crunchy
Pour in a separate bowl

For the Noodles

Preheat a  teaspoon in the same wok, add noodles and stir till soft, add  some soy sauce
Add the stir fried  vegetable waiting in the bowl to the noodles
Stir until both vegetables and noodles are nicely merged

For the Runner Beans

Add runner beans to already boiling water for 5-8 mins, remove and drain

Serve Stir Fry Noddles with Runner Beans and Skewered Beef.

Enjoy.
