Sweet Potato, Pearl Barley and Vegetables


Sweet Potato, Bell Peppers & Pearl Barley

Instructions

 For The Pearl Barley

to cook your pearl barley follow the instructions on the packet of your purchased pearl barley
once cooked set aside and prep the vegetables and sweet potato


  For The  Sweet Potato

wash the skin of the sweet potato properly and cut into circular shapes
place in a pot and boil for 8-10mins, once cooked
remove and place in the oven to bake for 10-15mins
set aside once baked

cut sweet potatoes
For the Bell Peppers

cut the bell peppers into thin strips and grill;
set aside once grilled


Final Prep

wash salad leaves
place baked sweet potato, pearl barley, grilled bell peppers and salad leaves on the plate

Lamb Kebab Salad

Fruit And Vegetable Smoothie


Happy Thankful Tuesday Smoothie Lovers,

I have a lot to be thankful for and I am sure you all do too, so let's give thanks today.
I have two smoothies for you today which is a fruit smoothie and a green creamy smoothie.

Ingredients : Fruit Smoothie
  • bananas
  • blueberries
  • kiwis
  • strawberries

Instructions
  • Place all the fruits in the blenders, add water or coconut water and blend until smooth

Rich,thick and tasty blend of fruits

Ingredients:Green Creamy Smoothie

  • avocado
  • celery
  • salad leaves
  • kiwi

Instructions
  • peel the skin off the avocado and kiwi and place in the blender
  • chop the celery into small chunks and add the salad leaves
  • add water and blend till smooth

My Healthy Lunch Prep for the Week

I remember growing up my mum always made the kids packed lunch which consisted of an egg sandwich or a jam sandwich and some other bits, I loved jam sandwiches and hated the egg sandwiches but had no other choice than to eat it. Then we graduated to the school lunches which I can hardly recall what we were fed but I know we enjoyed it. ha-ha!!

It is very rare to come by a healthy lunch option of meals in the office canteen these days as they are more concerned about feeding the masses than the healthy options. From time to time you'll find the odd looking salad which quite frankly isn't up to par.

Nowadays the concept of lunch does not exist in our offices as we are likely to spend lunch at our desks stuffing down a dry cheese & pickle sandwich from the office canteen , topped up with some cheese & onion crisps washed down with a "so called diet coke or Dr Pepper", then a Mars bar for afters.

Many of us rarely have a break as we are in the middle of deadlines. Given all the above circumstances, how can you feel healthy and do your best at work when most of your lunch is enjoyed at your desk or not taken at all?

I have been a victim of my above narration and in the last two years I made a conscious decision and habit not to eat at my desk and also to bring in my own lunch. I have had the best meals which makes me feel healthy and ready to combat the pile of work plunked on my desk or the emails awaiting my attention. 

In my humble opinion home made lunches are :

Lunch Prep for the week

My Lunch for this week consists of :

Monday:       Egg Salad
Tuesday:      Tuna Salad
Wednesday:  Salami & Sweet corn salad
Thursday:     Salmon & Corn on the corn Salad
Friday:         Noodle Salad
Spare:          Olive & pepper Salad

I get a lot of my ideas from the salad counter in the supermarkets and sometimes make them up with the contents of my fridge. The other day I went into Sainsburys and looked at their lunch menus and spotted the noodle salad for £3.40 and my home made noodle salad cost me less than that.

Healthy Dinner:Salmon On A Mushroom & Spinach Bed With A Mango Salsa Salad

Happy Thursday All,

Hope everyone had a lovely day today.

I get really excited about dinner just as much as I get excited about my smoothies along  with a whole lot of other things that I won't mention on here ... *chuckles*

I love to browse the web and search for healthy ingredients that consists of the contents of my fridge as I have lot of things in my fridge...fruits, veggies you name it I got it :-)

So I came across this lovely hearty belly filling dinner and thought... YES that's what I am having. 

So let's get started....


Ingredients 
bell peppers ( Red & Yellow)
coriander
cherry tomatoes
red onion
salmon
spinach
lime
mango chunks
mushrooms
olive oil 

seasonings



For the Mango Salsa Side Salad

dice the onions, bell peppers, mango slices and place in a clean bowl
chop some coriander leaves finely, add to the mix with black pepper, a pinch of salt and olive oil
mix well and place in the fridge





For the Salmon

preheat the oven and oil your baking tray or foil
remove from package and clean gently with some white vinegar
season with some salt and black pepper
place in the oven for 25-35mins until it's cooked and nicely done
I like my salmon nice and brown


For the Bed of Spinach

heat a tea spoon of olive oil in a wok
add washed mushrooms,onions and tomatoes and stir fry for 4-5 mins
add salt and black pepper
add washed spinach or kale to the wok and stir
squeeze some lime juice into it and stir


Place the spinach mix on the plate with the juices flowing, add salmon on top and finish it off with your mango salsa side salad

For us it's a long weekend as Monday 26th is our Spring  Bank holiday.

My friends who live in America always say that we Brits have too many holidays in a year Lol!! Jealous much? haha!

Salmon and Steamed Vegetables


My love for salmon started a few years ago.

As a child I despised fish with a passion and still do but secretly I love fried fish especially red snapper or white fish (my sister calls me a fake fish eater) the trick for me is that the fish has to be fried and then really dry otherwise I won't eat it.

My mum always cooked/baked mackerel, the black and blue skin often made me sick. 
On many occasions she would place the baked mackerel, garnished lemon and all that jazz on the table and I would literally feel sick at the sight of the black and blue creature staring at me on the plate.

I hated fish of any kind and refused to eat it. I am still very fussy and won't eat any cooked fish but salmon won over my heart and to be honest when I do bake my salmon I  rip the skin off as I can't bear to taste the skin but I have resorted to buying the skinless salmon fillets from the supermarkets.

The truth is when my mum put the mean looking mackerel on my plate I would it pass it to my sister and if she was unable to pick it from my plate without my parents catching us then the teddy bear would get stuffed with it ..mum will be shocked if she ever found out ha ha ha!!  Sorry teddy :-(

Tonight I fancied my favourite salmon and matched it up with some steamed vegetables and a little sweetcorn, tomato and cucumber salad.

  • lemon sauce

Avocado, Beetroot, Couscous Salad with Carrot & Orange Smoothie


Earlier on I talked about my love for avocado and the various things you could do with avocado. Having avocado with a salad is a common thing to do.

Avocado, Beetroot, Moroccan Couscous and Chicken Fillet Salad

  • 2 avocados
  • beetroot
  • 1 chicken fillet
  • Moroccan style couscous
  • Sweet sauce



Ingredients for carrot and orange smoothie
  • 2 carrots
  • 2 oranges
  • Ice cubes 
  • 2-3 cups of water

Instructions
  • Peel carrots and cut into small bits and put into blender, add water and blend until smooth.
  • Peel oranges and cut into small pieces add to blender with blended carrots and blend until smooth, add water if required.
  • Pour into glass and serve cold.

The Four S's - Salad, Salmon, Strawberry & Smoothie


Inspiration is all around us if we open our eyes and clear our mind. I wasn't sure what to call today's blog then I looked at my meal and noticed that they all contained the letter S so I went ahead and titled it " The Four S's- Salad, Salmon,Strawberry and Smoothie. Awesome right? Well I think so ...

In one of my previous posts I talked about including fruits into your meals and this is what I have done today.

  • 1 beetroot
  • 2 frozen bananas
  • 1 cup of Alpro Soya Milk
  • 2 teaspoons of honey to sweeten
  • handful of raspberries  to garnish

Rich Pinky- Cream delicious flavour
