Chicken Fillet, Couscous & Vegetables

Hello Food Lovers,

I hope you've all had a lovely day and the sun is shinning wherever you are?

I can't boast of a lovely weather here as the sunshine has disappeared again and the torrential rain is back :-(

I have another healthy dinner choice for you today.

You've probably noticed that I love couscous, well what's not to like?

Couscous provides you with essential nutrients to help maintain your overall health. It's light, delicious and can be eaten as a side dish or dessert.


You can buy the already made couscous from the salad bar in the supermarket or buy the dry grains in a packet as shown below. I prefer to buy the dry grains and add a few other bits to it such as mushrooms, onions, sweetcorn, olives and bell peppers.

Couscous has been a great alternative to rice and pasta for me.

Chicken Fillet, Couscous, Green Beans and Cherry Tomatoes


Ingredients

1 packet of couscous
1 chicken fillet
green beans
cherry tomatoes

Instructions

For the Couscous

Place couscous in a plastic container, cover with 100ml boiling water  and close the lid to let the couscous steam and swell up

After 10mins, open the lid add some olive oil sweetcorn,chopped bell peppers and stir
  
For the Green Beans

Wash and remove ends

Add the green beans into the boiling water

Bring to boil for 5mins

Drain the beans, add salt and black pepper

Place on a plate


For the Chicken Fillet
Preheat the grill, place chicken fillet in grill and let it bake for 30-35mins turning on both sides
Wash and place the cherry tomatoes on the plate
Serve with Baked Chicken fillet, green beans and couscous

Grilled Plaintain with Salmon and Vegetables

Hello Food Lovers,

I have another healthy choice recipe for you today.

Disclaimer

I am not a professional chef just a lady who likes to cook, make up nice meals and pretend like she's a chef. I do love the series " Master Chef" for those of you who might have seen the series.

Most importantly I care about the contents of my food and my stomach.


Grilled Plantain, Salmon(skin gets ripped off), Couscous, Green Beans and Cucumber




Ingredients

1 packet of couscous
1 plantain
1 salmon
green beans
cucumber and sweet sauce

Instructions

For the Couscous

Place couscous in a plastic container, cover with 100ml boiling water  and close the lid to let the couscous steam and swell up

After 10mins, open the lid add some olive oil and sweetcorn and stir
  
For the Green Beans

Wash and remove ends

Add the green beans into the boiling water

Bring to boil for 5mins

Drain the beans, add salt and black pepper

Place on a plate


For the Salmon
Season with salt and black pepper and place in the oven/grill for 20-25 mins turning on both sides
For the  Grilled plantain
Preheat the grill, brush the plantain with olive oil
Slice plantain light in the middle
Place plantain in the grill until brown
Turn on each side after 25 mins
Once brown on both sides, remove and place on a plate
Cut the cucumber and place on the plate
Serve with  Grilled Plantain with couscous and salmon

Grilled Plantain Spinach Couscous Tomato & Olives Salad



Ingredients

1 packet of couscous
1 plantain
Handful of spinach
Sweetcorn, Cherry tomatoes and olives
Olive oil

Instructions

For the couscous

Place cous cous in a plastic container, cover with 100ml boiling water  and close the lid to let the couscous steam and swell up

After 10mins, open the lid add some olive oil and sweetcorn and stir
  
For the spinach

Wash and drain the spinach

Heat a teaspoon of olive oil in the wok until hot

Add the spinach and light pan fry for 3 mins until the colour changes

Remove from wok and place on a plate.
 
For the  grilled plantain
Preheat the grill, brush the plantain with olive oil
Slice plantain light in the middle
Place plantain in the grill until brown
Turn on each side after 25 mins
Once brown on both sides, remove and place on a plate
Cut cherry tomatoes and olives into two, add black pepper and a drop of olive oil and mix together to make a salad
Serve with  Grilled Plantain with spinach, couscous, tomato and olive salad.

 Enjoy and have a lovely weekend!

Avocado, Beetroot, Couscous Salad with Carrot & Orange Smoothie


Earlier on I talked about my love for avocado and the various things you could do with avocado. Having avocado with a salad is a common thing to do.

Avocado, Beetroot, Moroccan Couscous and Chicken Fillet Salad

  • 2 avocados
  • beetroot
  • 1 chicken fillet
  • Moroccan style couscous
  • Sweet sauce



Ingredients for carrot and orange smoothie
  • 2 carrots
  • 2 oranges
  • Ice cubes 
  • 2-3 cups of water

Instructions
  • Peel carrots and cut into small bits and put into blender, add water and blend until smooth.
  • Peel oranges and cut into small pieces add to blender with blended carrots and blend until smooth, add water if required.
  • Pour into glass and serve cold.
